  1. Corto las dos pechugas a trocitos no muy grandes y los dejo macerar un par de horas con 2 yogures al que le añado un poco de comino, cúrcuma en polvo, hierbabuena y herbamare
  2. Pongo olla mediana al fuego al que le echo un chorrito pequeño de aceite de oliva y le añado una de las cebollas cortada a trocitos y el tupinambo cortado a daditos pequeños, doy un par de vueltas y le echo la mantequilla y la pasta de curry verde dándole unas vueltas en caliente y que vaya ligando con la mantequilla
  3. Acto seguido saco el pollo que tengo macerando y lo hecho todo a la olla mezclándolo con esa base que tengo en el fuego, le doy vueltas con la espátula y le añado los calabacines y las zanahorias que tengo previamente cortado a dados, le doy dos vueltas más,
  4. Ya porfin echo el caldo y la leche de coco a la olla y subo el fuego un poco más y voy dándole vueltas que se vaya ligando lo remuevo de vez en cuando
  5. A mitad de cocción 30min le añado la otra cebolla cortada a dados y el jengibre rallado. (Como truco le pongo un corcho de una botella a la olla para que ayude ablandar la carne)
  6. Optativo si se quiere al emplatar le pones por encima ralladura de la cáscara de una lima para darle un toque más thai.. a mi me gusta acompañarlo con arroz jazmin
